In the meantime here is a fabulous recipe for a caviar pie - that can be served with crackers, chips or on a whole new level - bugle corn chips!

Butter a springform pan on the bottom and sides.

Ingredients:

  • 7–8 hard-boiled eggs, chopped

  • 3 tablespoons mayonnaise

  • 1 red onion, finely chopped

  • 8 ounces cream cheese, softened

  • 3/4 cup sour cream or crème fraîche

  • 1 bunch green onions, chopped

  • 1 large jar caviar

Instructions:

  1. Butter the bottom and sides of a springform pan.

  2. In a bowl, combine the chopped hard-boiled eggs with the mayonnaise. Spread the mixture evenly over the bottom of the pan.

  3. Sprinkle the chopped red onion evenly over the egg layer.

  4. In another bowl, mix the softened cream cheese with the sour cream or crème fraîche until smooth. Spread this mixture over the red onion layer.

  5. Refrigerate for at least 3 hours to firm up.

  6. Before serving, top with the chopped green onions, then spread the caviar evenly over the top.

  7. Release the springform pan, slice, and serve chilled.
