In the meantime here is a fabulous recipe for a caviar pie - that can be served with crackers, chips or on a whole new level - bugle corn chips!
Butter a springform pan on the bottom and sides.
Ingredients:
-
7–8 hard-boiled eggs, chopped
-
3 tablespoons mayonnaise
-
1 red onion, finely chopped
-
8 ounces cream cheese, softened
-
3/4 cup sour cream or crème fraîche
-
1 bunch green onions, chopped
-
1 large jar caviar
Instructions:
-
Butter the bottom and sides of a springform pan.
-
In a bowl, combine the chopped hard-boiled eggs with the mayonnaise. Spread the mixture evenly over the bottom of the pan.
-
Sprinkle the chopped red onion evenly over the egg layer.
-
In another bowl, mix the softened cream cheese with the sour cream or crème fraîche until smooth. Spread this mixture over the red onion layer.
-
Refrigerate for at least 3 hours to firm up.
-
Before serving, top with the chopped green onions, then spread the caviar evenly over the top.
-
Release the springform pan, slice, and serve chilled.
