Like all young Mom's with hectic schedules - its hard to find time to cook!
We love that our daughter Josephine makes time to whip something delicious up in between driving to soccer, basketball, tennis or the barn! Josephine and her husband Sam could install a revolving front door for all the running around they do with their children.
This recipe is quick and easy - and delicious and Josephine prepared it in one of our best cooking vessels - the Season and Stir 12 inch braising pan with lid! Ingredients:
1 medium Vidalia onion chopped
1 red pepper sliced
1 small jar of roasted red peppers
1 can of coconut milk
2 lbs. of Argentinian Shrimp
Salt and Pepper to taste
White rice
Directions:
- Start by sautéing your chopped Vidalia onion in some good olive oil (we have so many to choose from on seasonandstir.com) Josephine has the Spanish oil from Llagrimes Del Canigo!
- Add the sliced red pepper and a jar of roasted red peppers and let that sauté.
- Add in 1 can of coconut milk, salt and pepper to taste.
- Once mixture has cooked down for a few minutes, add your shrimp in and finish cooking until shrimp are thoroughly cooked and that beautiful reddish pink color!
- Serve over white rice
